Apple Fritters!


Well, I know Abbey has given up on me ever posting a blog entry, so I am going to surprise her ; )
This morning, Sara posted on facebook a link to a Mennonite cooking blog. I didn't make the recipe that Sara did; however, I WAS inspired by the recipe for apple fritters.
Now, I LOVE apple fritters. But they are usually too large, too greasy, and the ones I buy at the bakery probably have stuff in them that I wouldn't be able to replicate in my home kitchen even if I thought that that would be a good idea!
So I adapted this recipe just a bit, just to my liking:
Apple Fritters

1 1/4 cup white-wheat flour
2-3 T sugar, depending on tartness of apples
2 teaspoons baking powder
1/4 teaspoon salt
freshly grated nutmeg
2/3 cup milk
1 egg
3-4 medium apples, pared and diced and tossed with 1 T fresh lemon juice
Powdered sugar, for coating fritters when cooled

Heat 2" of canola oil over medium heat in a cast iron pan. Meanwhile, blend dry ingredients. Beat egg and add milk. Pour liquid ingredients into flour mixture and stir until smooth. Stir apples into batter. Test the oil by dropping a bit of batter into it: if the droplet sizzles and browns, the oil is ready. Drop batter from soup spoon into hot oil, making 3 fritters at a time. Cook until golden brown on bottom side and bubbles appear on top, like pancakes. Turn the fritters over and cook until done. Drain them on paper towels and roll in powdered sugar when cooled. Makes about 1 1/2 dozen.
